Fish
Soup

Ingredients:
2 pieces of your favorite fish about 1 kilo (2 pounds)
Olive oil, or Ghee
1 medium onion
1 cup tomato sauce
1 spoon tomato paste
1 small spoon cumin
3 cloves minced garlic
1 large spoon chopped parsley
1 large spoon chopped cilantro
1/2 small spoon salt
1/2 small spoon chili pepper
1/2 small spoon turmeric
1/4 cup rosemarina pasta (sharba) bird's tong (Lesan al asfoor)
Directions:
* In a deep cooking
pan boil 6 cups of water and add a spoon salt then remove from the
heat.
* Add the fish
to the hot water, cover and set aside for at least 10 minutes..
* In another
deep cooking pan, chop the onion and saute' in olive oil or in a
spoon of ghee till onions become translucent, add the garlic, tomato
sauce, tomato past, chili pepper, turmeric, and cumin.
* Add 2 cups
from the fish warm water, and cook on a medium heat for about 7
to 10 minutes.
* Remove the
fish from the warm water and with your hands remove the bones and
flake the fish and add to the sauce.
* Add the remaining
fish warm water to the sauce, and when it starts to boil add the
rosemarina pasta and mix to prevent the pasta from sticking to the
pan or to each other.
* Add the chopped
parsley and chopped cilantro, cover the pan and remove from the
heat and let the soup set for about 5 to 7 minutes to let the cilantro
and parsley release its flavor and blends into the sauce.
* Mix and serve
in soup bowls and garnish with fresh minced cilantro. Serve with
Italian, French or pita bread. Enjoy
