Shakshouka

Ingredients:
4 to 6 eggs
4 to 5 fresh tomatoes
3 cloves of garlic
1 onion
Olive oil
2 to 3 medium green chili peppers
Salt
Black pepper
Directions:
Chop the onion and the garlic and sauté in olive oil in a
large cast iron skillet, or a frying pan till they turn golden &
translucent.
1- Slice the tomatoes, chop the green chili peppers and spread both
over the onion and the garlic. Sprinkle a dash of salt and black
peppers then cover and cook on a very low heat for 15 to 20 minutes.
2- Remove cover and crack the eggs over the tomatoes, and with a
fork spread the yolk to cover the tomatoes.
3- Cover and cook for 4 to 6 minutes.
4- With a spatula or a large spoon scoop one portion at a time and
serve on flat plates with slices of white, wheat, or pita bread.
(NOTE: If you do not like it spicy, disregard the green chili pepper
or reduce the amount of it)
