Stuffed
Bell Peppers

Ingredients:
· 1 ½ kilo bell pepper (sweet pepper)
· ¼ kilo ground meat (lamb or beef)
· 2 handful of green Italian parsley (if Libyan parsley is
not available)
· 1 handful of green mint
· 6 to 8 green onions
· 1 cup of rice
· 3 tomatoes
· 1 table spoon tomato past
2 to 3 spoons ghee
· ½ small spoon black pepper
· 1 small spoon red pepper
· ½ small spoon turmeric
· 1 small spoon allspice
· 1 to 2 spoons salt
Directions:
· Wash the bell peppers and cut the top of each one and remove
the seeds from inside and sprinkle a pinch of salt inside each pepper
· Wash and chop the parsley and the mint
· Cut the tomatoes into small pieces and add to the mint and
parsley and ground meat
· Add to the mix the tomato paste, salt, turmeric, allspice,
red pepper then add the olive oil or ghee
· Rinse the rice in cold water then add it to the mix and mix
with you hand
· Stuff the peppers with the mix and place them in a backing
pan upside down (the bell peppers opening should face down)
· Mix a table spoon of tomato paste with ¼ cup water,
a pinch of salt and 1 table spoon olive oil then pour over the peppers
· Cover the peppers with a backing wax sheet or greased aluminum
foil and insert in the oven on medium heat for about 45 minutes
· Once it's cooked display the stuffed peppers on a serving
tray and serve
